Quick to prepare and complementary to a variety of flavor sets, eggs live to take on bigger and bolder breakfast dishes like the cast iron shakshuka. This tasty and complex dish is a lot easier to do at home and a secret that most fancy brunch restaurants would prefer you don't know about!

Just combine eggs, tomatoes, harissa and whatever herbs and spices you have handy, put it on the grill, and go find something else to do for a few. The result will be a delicious breakfast -- if there is not enough meat in the recipe, add whatever tickles your appetite, including chorizo, sausage, bacon or even salmon.

Making your own shakshuka on the grill with a cast iron is an easy breakfast treat. Here's the ingredients and the instructions.

  • 1 tbsp olive oil
  • 1/2 onion, peeled and diced
  • 1 clove garlic, minced
  • 1 bell pepper, seeded and chopped
  • 4 cups ripe diced tomatoes, or 2 cans (14 oz. each) diced tomatoes
  • 2 tbsp tomato paste
  • 1 tsp mild chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • Pinch of cayenne pepper, or more to taste (careful, it's spicy!)
  • Pinch of sugar (optional, to taste - omit for low carb)
  • Salt and pepper, to taste
  • 6 eggs
  • 1/2 tbsp fresh chopped parsley (optional, for garnish)

 

Grilled bacon and herb grit cakes

  • 4 cups hot cooked instant grits
  • 1/2 cup (2 ounces) shredded white cheddar cheese
  • 1 tablespoon minced fresh or 1 teaspoon dried thyme
  • 2 teaspoons chopped fresh parsley
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 3 bacon slices, cooked and crumbled
  • Cooking spray
